Another Excellent Crockpot Dish Made By My Daughter

We had company last night. My daughter did the cooking! She picked Spiced Pork with Squash and Potatoes from the Skinny Slow Cooker magazine I picked up at the grocery store. As luck would have it, I found the recipe on line from somebody else's blog! It was worth searching for so others can enjoy it. It was delicious and a hit with the guests.

To make it easier to assemble, I bought the pre-cut butternut squash at the grocery store.  That saved a fair amount of time and hassle for my daughter. I was a little worried about adding the fresh poblano peppers, fearing that it would make the dish too spicy. It didn't. It added complexity without the fiery hotness some peppers, like jalapenos provide.

I made fresh Beer Bread and a salad to go along with the Spiced Pork. Easy Meal which made for a fun party. I love seeing my daughter grow in her enjoyment of cooking and fixing meals!
