It is amazing to me how the same recipe can come out very differently each time it is prepared. I have now baked the Lemon-Zucchini Muffin twice. I was surprised at how visually different they looked once they came out of the oven. The second batch which I think looked better also seemed to taste better. I was the baker each time. I can't remember doing anything significantly different. If anything, I was more distracted the second time because I was on the phone with my eldest some getting caught up on the happenings of his week... Maybe that was the secret!
