Portion Control is the Key to Success

There are so many helpful resources available on the internet these days. I recently visited the Joslin Diabetes Center website to find out more about their recommendations regarding healthy eating for kids living with diabetes. At the top of the page I saw the title “Key To Success: Portion Control.” The article on the page begins “The amount of food you eat is closely related to blood glucose control. If you eat more food than is recommended in your meal plan, your blood glucose (sugar) will go up. The only way you can tell if you are eating the right amount is to measure your foods carefully.” No matter what age we are or what chronic condition we may be living with and managing, eating healthy is all about what we eat and how much we eat. Portion Control is the key to success.

5 Portion Control Tips to Help Kids Living with Diabetes

1. Easy measuring.  Finding ways to measure that are easy and repeatable is a must when we know portion control and portioning amounts is critical to our health. Having a scale to weigh your food and having measuring/serving spoons to portion your foods are must haves. Check out LivSpoons for easy measuring. 2. Balanced Diet. We know that just eating one type of food isn’t good for us. We need balance in our diet to live health. We also know each food type has its own portion size. 5. Involve the entire family in Healthy Eating. Eating healthy is a way of life. If one person is living with a chronic illness, like diabetes, it affects the entire family. Kid-Friendly Macaroni and Chesse


Macaroni and cheese is one of those classic comfort foods. When the weather is cooler or we just need a cozy meal to feed our soul, this is a classic go-to. 

The challenge is the recipe for Mac & Cheese is traditionally loaded with carbs and calories. My quest was to figure out how to offer a lower carb and lower calorie version of this classic that could qualify as diabetes-friendly, kid-friendly and gluten free. A tall order.

To be considered diabetes-friendly I wanted to have the overall carb count 45 grams or lower. This recipe came out at 44.25 grams.

To make it creamy and thick without adding flour I used butternut squash and Greek yogurt. Below is my new version of Macaroni and Cheese that met the necessary requirements AND the thumbs up from my family.



Kid-Friendly Macaroni and Chesse


Luscious Macaroni and Cheese

Ingredients

  • 3 cups cubed butternut squash
  • 1 ¼ cups fat-free, low sodium chicken broth
  • 1 ½ cups nonfat milk
  • 2 garlic cloves, peeled
  • 2 tablespoons plain nonfat Greek yogurt
  • 1 teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 ¼ cup Gruyere cheese, shredded
  • 1 cup pecorino Romano cheese, grated
  • ¼ cup Parmesan cheese, finely grated, divided
  • 16 ounces Banza® chickpea elbow pasta
  • 1 teaspoon olive oil
  • Cooking spray, olive oil flavor
  • 2 tablespoons parsley, chopped

Directions


  1. Preheat oven to 375°. Put water on to boil for cooking the pasta.
  2. Combine squash, broth, milk and garlic in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to medium and simmer until squash is tender when pierced with a fork, about 20 minutes. Remove from heat.
  3. Place the squash mixture in a blender. Add salt, pepper, and Greek yogurt. Remove the center cap in the blender lid to allow the steam to escape. Blend until smooth.
  4. Place blended mixture in a bowl. Stir in the Gruyere, Romano and 2 tablespoons of Parmesan. Stir until combined.
  5. Cook pasta according to the package directions omitting any salt or fat. Once cooked, drain well.
  6. Add pasta to the squash mixture. Spread the mixture evenly into a 13 x 9-inch glass or ceramic baking dish coated with cooking spray. Sprinkle top with remaining 2 tablespoons of Parmesan.
  7. Bake at 375° for 20 minutes or until bubbly. Next turn on the broiler for 5 minutes to brown the top a nice golden color.
  8. Sprinkle with parsley and serve immediately.

Mighty-Making Green Monkey Smoothie -- a Kid-Friendly Recipe

Green Monkeys LOVE vegetables!


This smoothie is a great way to drink your vegetables! It is so packed with good nutrition you’ll be ready to zoom around on your bike or climb on monkey bars! 

Serves 2  

Ingredients~ 
1 cup cold water 
¼ cup finger carrots 
4 leaves of green kale, leaves peeled off 
1 cup cucumber, skin on, cut into big chunks 
1 cup (or one small) Granny Smith apple, cut into big chunks 
2 tablespoons instant sugar-free banana cream pudding (such as Jell-O) 
1 packet (or ¼  teaspoon) stevia 
1 cup crushed ice 

Directions~ 
1. Add water then each ingredient one at a time into a blender with its top on and the center hole open.  
2. Add crushed ice lat once all other ingredients are mixed together. 
3. Serve immediately. Divide evenly for 2- 8 ounce servings or 1-16 ounce serving.

Kid-Friendly and Healthy--Yummy Banana Bread Muffins
Muffins are an easy way to include kids in cooking. They are generally uncomplicated recipes. Muffin recipes have simple ingredients and straightforward directions. Kids love mixing, mashing and measuring. This recipe is great for all these activities.

I recently did a "recipe make-over" for my favorite Banana Bread Muffin recipe, adjusting the ingredients to make it healthier and more kid-friendly. My goal was to use less oil and sugar and add flavors kids like. I did this by substituting apple sauce for the oil and Truvia Baking Blend for the refined sugar. In addition I took out the sage and put in vanilla. It was a hit!

These Yummy Banana Bread Muffins are filling and satisfying for kids because of the whole wheat flour, fresh banana, apple sauce and plain Greek yogurt used.  And by using far less sugar they do not trigger the need for more sugary sweets as so many pre-packaged treats do. These muffins are great on their own or included as part of a meal. Here is the recipe:

Yummy Banana Bread Muffins

Ingredients-
1 cup flour, unbleached
1 cup white whole-wheat flour
½ cup Truvia Baking Sugar Blend
1 teaspoon baking soda
¼ teaspoon salt, coarse Kosher
2 eggs, large
1 ½ cup banana, ripe and mashed (3 large)
⅓ cup Greek yogurt, low fat and plain
¼ cup apple sauce, unsweetened and organic
1 teaspoon vanilla extract
Cooking Spray

Directions-
1. Combine flours, sugar, baking soda, and salt in a medium bowl. Make a well in center of flour mixture.
2. In a separate bowl beat eggs with a whisk. Next add mashed banana, yogurt, apple sauce and vanilla, stirring with the whisk.
3. Add the egg mixture to the flour mixture, stirring until moist.
4. Spoon batter into muffin cups sprayed with cooking spray. Fill ⅔rds full.
5. Bake at 375 degrees for 25 minutes or until muffins spring back when touched lightly in the center.
6. Let muffins sit in tin for 10 minutes. Promptly remove muffins and serve. These muffins keep well for a few days in the refrigerator or weeks in the freezer.

Serves: 12. Serving size: 1 muffin. Calories per serving: 128.
