Easy and Elegant Summertime Dessert—Berry Parfait

In the summer we want foods that are refreshing, satisfying and easy to make. It is just too hot to spend too much time in the kitchen. There are also too many fun things we want to be doing outside for us to want to be stuck in the kitchen cooking. Here is a dessert that can also be enjoyed as a snack that fits the bill. It is easy to prepare, can be made ahead of time, looks elegant (check out the Livliga wine glass presentation!), can be varied according to your mood or menu, and comes in perfectly portioned serving sizes. Here is the recipe:

Ingredients


1 Yoplait 100 Greek yogurt, lime flavored

½ cup blueberries, washed

1 Lime, cut into thin slices, ½ moon shapes



Needed: right-sized wineglass; needs to be no bigger than an 8 oz. glass.

Directions


1. Place a third of the yogurt in the bottom of the wineglass. Next place ½ of the berries in the glass.

2. Repeat the sequence. Hold on to a couple of the berries for garnish.

3. Top with remaining yogurt.

4. Garnish the top with a couple of berries and a thin slice of lime.

5. Refrigerate until ready to serve.



You can vary the berries and the flavor of the yogurt depending on what you have on hand, your mood, or the menu you are preparing. You can even make it a build- your-own dessert with kids putting out the cartons of yogurt and bowls of fruit along with right-sized mugs or glasses for them to use. It is fun, easy and satisfying on a hot summer day.



Serves 1. Can scale to any number of servings. Calories per serving: 142.

Slow Cooker Pulled Chicken Tacos—a Summer Recipe


Easy Summer Slow Cooker Recipe--

This is one of my recipes for using a slow cooker in the summertime. The idea is to keep it easy, tasty and healthy. This recipe is also gluten free if you use corn tortillas.
This makes for an easy leftover lunch too that is very portable in plastic/glass containers.

Ingredients~
1 ½ pounds boneless chicken breasts
1 ½ pounds boneless chicken thighs
1 can (14.5 oz) diced tomatoes with green chiles
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon oregano
¾ teaspoon salt
½ teaspoon ground black pepper
¼ cup fresh lime juice
¼ cup cilantro, chopped
Cooking Spray, olive oil flavored
24 6-inch corn tortillas

Toppings~
Shredded lettuce, generously applied
Chopped Avocado, ¼ per person
Greek Yogurt, plain, 2 tablespoons per person
Shredded Mozzarella, 1 tablespoon per person
Picante Sauce, 2 – 4 tablespoons per person


Directions~
1. Place chicken in the slow cooker that has been lightly coated with cooking spray.
2. In a small bowl mix together the tomatoes, garlic and next 5 ingredients. Pour over the chicken.
3. Cook on low for 8 hours or on high for 5.
4. Remove cooked chicken to shred it; use two forks to pull it apart.  Return the chicken to the slow cooker along with any juices. Stir in the lime juice and cilantro.
5. Serve up on warmed tortillas. Add toppings.

Serves 12. Each serving ¼ cup of pulled chicken taco mixture split between 2 tortillas.

The perfect summertime recipe- easy, done ahead of time and has leftovers so there is one less meal to cook!

Drinks- Rosemary Tequila Lime Smash

This Rosemary Tequila Lime Smash is savory and satisfying in the Livliga Aveq perfectly portioned glass (photo by LivligaHome).
There is nothing better in the summer than serving up a thirst quenching, packed full of healthy herbs, savory concoction, which satisfies a variety of senses.  Smash drinks are fun to make because you smash herbs with a fruit juice and alcohol to release their flavors and aroma. A delicious way to make a seasonal summer drink that will cool your palette and refresh your spirit.

Rosemary Tequila Lime Smash

Ingredients~
1.5 ounces tequila (1 jigger)
1 sprig rosemary
6 mint leaves
2 basil leaves
cup lime juice
cup Canada Dry ginger ale 10
Ice

Directions~
1. Place all ingredients, except ginger ale, into a mortar and smash together with the pestle  (alternately put in a bowl and smash with a wooden spoon).
2. Put smashed ingredients in a shaker or jar with top. Add ginger ale and shake well.
3. Strain into a Livliga right-sized Aveq beverage glass. Add ice. Garnish with rosemary.

Serves 1. Easily scalable to any number. Calories per serving: 126 .

There is nothing better in the summer than serving up a thirst quenching, healthy drink. There are a lot of versions of smoothies out there, but sometimes you want something a little lighter to drink. My Cantaloupe Frappé is a cool concoction that fits this need. It is lighter, smoother and has a wonderful mild fruit flavor. It makes for a perfect seasonal summer drink that will cool your palette and refresh your spirit.

Cantaloupe Frappé

Ingredients~
¼ cantaloupe, seeded and coarsely chopped (about 1½ cups)
½ cup nonfat Greek yogurt, plain
1 scoop vanilla whey protein powder
2 tablespoons orange juice
4 squirts sugar-free vanilla syrup (Torani)
1 cup crushed ice
3 sprigs of mint for garnish

Directions~
1. Place all ingredients, except the mint, in a blender.  Blend until smooth and frothy.
2.  Pour blended ingredients in 3 Livliga Right-sized Aveq Beverage Glasses. Garnish with mint.

Serves 3. Serving size 8 ounces. Calories per serving: 91.

Slow cooker recipes are most often served up in the Fall and Winter months. We think of them as warm and cozy meals in the cold and inclement months. I would like to inspire all of us to think about the Slow Cooker as a great way to fix a meal any time of year, particularly in the hot summer months.

Here are 6 Reasons to Use a Slow Cooker in the Summer Months:

1. No matter the time of year, slow cooker recipes make meal preparation easy.  They are meals that are easy, one-recipe dinners that are great for low-maintenance grocery shopping. Plan ahead on Sundays for 2 or 3 slow cooker meals from salads, pastas and soups to tacos, stir-frys and sliders.  Make this summer one where you spend more time outside than in the kitchen.

2. Slow cookers can use a lot less energy than an oven or even a stovetop. This can really be helpful in peak energy use months in summer when the air conditioning is on and you are trying to stay cool.  And many of us want to be more mindful about our choices and energy use in general. Slow cooker meals can be a great tool in helping us be mindful.

3. You can assemble the slow cooker meal in the coolest hours of the day. Starting the day by putting together your slow cooker recipe can not only save you time but keep you cool. Who wants to fix a meal over a hot stove at the end of the day on a hot summer night? Not me. It is much more pleasant to get the meal prep done first thing when the air is still relatively cool in the summer.

4. It’s a great way to combat summer doldrums, especially when it comes to cooking. How many of us just can’t face cooking or organizing another meal in the summer because we are too hot, too tired and too brain dead from the heat? Every summer I end up facing the doldrums. One way I have found to help alleviate the lethargy is to plan ahead and use the slow cooker so I get the organizing and prepping out of the way first thing before the doldrums set in.

5. Slow cookers are a perfect way to serve up summer comfort food. Who says we don’t need comfort food in the summer? Actually, I know when I am hot and tired after a hard day’s work all I want is a meal that is easy, tasty and familiar. Something with carbs is especially satisfying like no-fuss “crockpot” vegetarian lasagna.

6. They are a wonderful solution for not having to cook each day. Slow cooker recipes are generally for 4, 6 or 8 servings. This means there are always leftovers. Leftovers are ideal for summertime eating because they mean less cooking. I would gladly eat a meal of delicious leftovers instead of having to cook another meal in the heat. Besides, it is another way to free up your time for gardening, cycling or lazing on the lounge chair.
