This chicken salad is the perfect quick and easy lunch or dinner choice for busy weekdays. With less than 400 calories per serving, it's a wonderfully refreshing and healthy meal. Who says salads have to be boring? Dress up leafy greens, which are rich in folate and vitamin C, with protein-packed chicken and antioxidant-rich mango and avocados, which are a great source of heart-healthy monounsaturated fats.

Ingredient

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoons mango chutney
  • 1 tablespoon low-sodium soy sauce
  • 3/4 teaspoon grated peeled fresh ginger
  • 2 cups poached chicken breast, cubed
  • 3 green onions, chopped
  • 1/2 sweet red bell pepper, diced
  • 8 cups mixed salad greens
  • 1 peeled mango, diced  
  • 1 peeled avocado, diced 

 

Directions

  1. Combine oil, juice, chutney, soy sauce, and ginger in a small bowl.
  2. Combine Chicken, green onions and red pepper in a bowl and toss with 2 tablespoons of dressing, reserving the rest to drizzle over the prepared salad.
  3. Arrange greens, mango, and avocado evenly on 4 serving plates. Divide the chicken mixture in 4 over greens. Drizzle reserved dressing over salads.

Serves 4. Calories: 395; Total Fat 20.5g; Sodium 363mg; Total Carbohydrate 27.3; Dietary Fiber 4.8g; Total Sugars 14.4g; Protein 29.4g.

Product Reviews: A Healthy Diabetes-Friendly Electric Pressure Cooker Cookbook and The Instant Pot

When you are living with diabetes you live with a lot of “have to’s” that can require many extra steps to manage your health and live life as your healthiest self.  The trick is to find ways that make preparing healthy foods, cooking them, and measuring them doable, repeatable and, perhaps most importantly, enjoyable.

There has been a lot of buzz about the Instant Pot or Electric Pressure Cooker.  I wanted to find out what all the excitement was about.  Some questions I wanted to answer were: 

Is it really true that food cooks in a lot less time? 
Is it true that it is easy to prepare foods in an Instant Pot?
Can you prepare nutritious and delicious recipes in an Instant Pot?



Here is what I found out. As with any device, it does make a difference which kind you buy. I bought the bigger capacity Instant Pot that included the button for making yogurt (see photo). It is not difficult to use but it does take some getting used to. You do need to read the instructions. If you don’t pay attention to the steps in using the Instant Pot and heed the warnings, you can get into trouble or damage your Instant Pot. You do need to pay attention, but it is not hard. Once you get used to following the steps it is actually an easy machine to use. Here is what Shelby Kinnaird said in her latest cookbook that is an Instant Pot cookbook for those living with diabetes:

“Cooking with an EPC requires minimal planning, and clean-up is a breeze. You can usually create something tasty from ingredients already in your pantry and refrigerator. You can set the table and unload the dishwasher while your meal cooks. You can even cook meat without defrosting it first. Managing your diabetes just got a whole lot easier.”  Kinnaird, Shelby. The Diabetic Cookbook for Electric Pressure Cookers: Instant Healthy Meals for Managing Diabetes . Rockridge Press. Kindle Edition.

Shelby Kinnaird is a great cook. She is practical too so she makes her recipes and the tools she uses doable for others. In researching recipes to use in my new Instant Pot I wanted to explore Shelby’s new electric pressure cooker cookbook. (As full disclosure, and a happy discovery, Livliga is mentioned in Shelby’s section on portion control.) Her recipes may be mindful of carbs and specific to the needs of those living with diabetes but I have found what that really means is that they are delicious recipes that can be enjoyed by everyone.  When living with diabetes you need to be mindful and measure your carbs. Ingredients and portion control go hand in hand. As someone who has had to be mindful of what I eat for weight management, I find her recipes a great resource and source of inspiration.



The greatest way for all of us to be mindful and manage what we eat is to prepare more meals at home.  The challenge is that we live busy lives and we need ways to put a meal on the table without too much effort, especially on a weeknight. My new Instant Pot and Shelby Kinnaird’s Diabetic Cookbook for Electric Pressure Cookers: Instant Healthy Meals for Managing Diabetes are a great combo for accomplishing just that. I prepared Shelby’s “Teriyaki Chicken” in the Instant Pot and served it with cauliflower rice and stir fry vegetables (from the freezer).  The chicken was moist and delicious. And true to the description, it was gluten free, low carb and family friendly. Everyone in our family enjoyed this healthy meal and gave it a thumbs-up for a repeat dinner. That is our highest compliment!

Summer Time Meal Planning--Mediterranean Chicken With Tzatziki Sauce

It is HOT! What can we fix for a meal that is easy and also soothing to the soul? We love it when our friends share favorite recipes that are easy to do and tasty to eat. We received recent inspiration from our friend Nikki Massie, aka @BariatricFoodie. It is a recipe with store bought ingredients that are easy to find, which tells you right up front that this in not going to be complicated to assemble for a meal. Nikki also shared that it is really GOOD! This is a recipe that anyone can enjoy and qualifies as bariatric-friendly. For those looking for a protein rich recipe this will be a great one to add to your repertoire.




Mediterranean Chicken with Tzatziki Sauce

Prep time: 5 minutes
Cook time: 10 minutes
Yield: 3 skewers

Ingredients

For the Chicken
  • 2 tbsp. unflavored Greek yogurt
  • 3 chicken breast tenderloins (about 1/2 lb.)
  • 1/2 tsp. oregano
  • 1/2 tsp. parsley
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tsp. lemon juice
  • 1/2 tsp. lemon zest
For the tzatziki sauce
  • 1/2 c. unflavored Greek yogurt
  • 1 garlic clove, minced
  • 2-3 mint leaves, sliced
  • 1/4 cucumber, grated
  • Juice of half a lemon
  • Salt, to taste
  • 3 skewers (bamboo or metal)
Directions
  1. In a resealable bag, combine yogurt, spices and lemon juice with chicken and coat well. Marinate at least two hours, while also soaking skewers (if bamboo) in water for same length of time.
  2. Heat a grill or grill pan and brush with olive oil. Skewer the chicken and grill until done through, turning halfway through.
  3. Make the sauce by combining the 1/2 c. yogurt, garlic, mint, cucumber, lemon juice and salt. Serve alongside the chicken.

  1. The marinade technique that I share provides a tender, juicy, chicken skewer that's perfect for your next family barbecue.
  2. Pair it with a Greek yogurt tzatziki sauce, and it's a one-two protein knock-out!

Best Chicken Soup Ever


Soups are great any time of year but they are particularly our “go-to” meal on cold winter nights. They warm us up, and give us that much needed sense of coziness and comfort. They are a great communal meal that can be stretched to suit a flexible number of people or they can be served up for one.

The best part about soups is that they can be hearty and healthy for us. They can make us feel full and satisfied without a whole lot of calories. This means they can help us lose weight and manage our weight. The ingredients we can put in soups also help us stay healthy by boosting our immune system, decreasing inflammation, and upping our antioxidants. This means they help us fight disease.

We all know that chicken soup is good for the soul and nurtures our bodies. And now we know it isn’t an urban myth…because of all the healthy ingredients in homemade chicken soup we know it really does help us cure what ails us. Whenever someone comes down with the cold or flu in our family the first thing I do is make my own chicken soup with bone broth.

Soups can be one of the easiest meals to make. They are great to make in crock pots to cook slowly through out the day and be ready when you come home from work or from a day of winter play. My homemade chicken soup is a great example of a soup you can make in a stockpot or crockpot…you choose what is easiest for you. And it is a favorite regardless of whether you need some extra TLC or not!

Chicken Soup for the Soul

Ingredients

  • 8 cups water
  • 4 cups chicken broth, low sodium
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 parsnip, chopped
  • 1 teaspoon onion powder
  • 1 teaspoon chopped garlic
  • 1 teaspoon instant chicken bouillon granules
  • 1 (3-4 pound) whole chicken, neck, liver and gizzards removed
  • ½ cup parsley, chopped (optional)

Directions

  1. Place all ingredients in a large stockpot or crockpot. Place on high and bring to a boil for 10 minutes, then lower heat to simmer and cook for 6 to 7 hours.
  2. Remove the chicken and all bones. Separate the chicken from the bones.
  3. Shred the chicken and place it back into the soup.
  4. Select 3 to 4 large chicken bones and place them back into the pot. Throw the rest of the bones away.
  5. Soup is ready to serve. It is great to serve as is or add egg noodles (2 cups) to make chicken noodle soup. Want to make a heartier meal? Prepare rice and serve up ½ cup rice and pour 1 cup of chicken soup over it. Top with a sprinkle of parsley, if desired.

Leftover soup can be kept in the refrigerator for up to a week or frozen for a future meal.

Valentine's day dinner can provide a great stage for a romantic evening. With a little thought and planning it can provide the perfect environment for all the elements necessary for romance and a memorable evening. You can even be mindful of the food you prepare, how you prepare it and that it is healthy and within a certain calorie range. By planning ahead you can put the perfect evening in place. And once you have planned it, who says you can't repeat it? Romantic dinners can occur all year long!

Set the stage- create a cozy, intimate environment. Set a table with the colors of romance- pink, red or lavender. Make sure to have candles. The more the better. And turn the over head lights down low. Splurge on a bouquet of flowers. Roses are the ultimate symbol of romance and Valentine's Day. Buy a bunch when you are at the grocery store. Then there is the music. Pick you favorite sexy music or get help from Spotify, Pandora or iTunes; they will all provide playlists suited to the mood you want for your special dinner.

Cocktails or Wine? Here is where we all get challenged when planning for a special evening. Often we tend to over indulge on the alcohol. This is where pre-planning is key. Over indulging is hard on our bodies from our mind to our liver. It also contributes an overload of calories. How to celebrate the evening, enjoy imbibing without becoming inebriated? We pick and choose. One choice- have a fun cocktail for starters and then choose a low calorie romantic drink for dinner like Perrier with a splash of Torani Sugar Free Raspberry Syrup served in champagne glasses with a raspberry at the bottom of the glass. This is a drink that can afford a refill...or two! Or you could choose- to do the reverse and have the Valentine Perrier drinks for starters and serve a half bottle of champagne or wine for dinner (buying a half bottle keeps you from overindulging).

The Menu- a great way to make it special is to pick a theme. This year I picked "French Bistro". French food goes hand-in-hand with romance. There are also certain foods that are considered an aphrodisiac like mussels and chocolate  which are an added bonus in planning a meal.

Pre-dinner Cocktail-- Fizzy Plum Bellini
 
Appetizer-- Steamed Mussels in Garlic and  Shallots

Dinner-- Bistro Roasted Chicken, Pomme Frite with Chives, and Baby Greens with Balsamic Vinaigrette 

Dessert--Fudgy Espresso Souffle with Raspberry Sauce and French Press Coffee


Creating a romantic dinner is about engaging all our senses from what we see and hear to what we smell and taste. It is all about the cues we send to our brain and the parts of the brain we stimulate. If we spend a little time planning and prepping we end up with an evening to remember. And as we know, romance is unbeatable for boosting our health.

Slow Cooker Pulled Chicken Tacos—a Summer Recipe

Easy Summer Slow Cooker Recipe--

This is one of my recipes for using a slow cooker in the summertime. The idea is to keep it easy, tasty and healthy. This recipe is also gluten free if you use corn tortillas.
This makes for an easy leftover lunch too that is very portable in plastic/glass containers.

Ingredients~
1 ½ pounds boneless chicken breasts
1 ½ pounds boneless chicken thighs
1 can (14.5 oz) diced tomatoes with green chiles
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon oregano
¾ teaspoon salt
½ teaspoon ground black pepper
¼ cup fresh lime juice
¼ cup cilantro, chopped
Cooking Spray, olive oil flavored
24 6-inch corn tortillas

Toppings~
Shredded lettuce, generously applied
Chopped Avocado, ¼ per person
Greek Yogurt, plain, 2 tablespoons per person
Shredded Mozzarella, 1 tablespoon per person
Picante Sauce, 2 – 4 tablespoons per person


Directions~
1. Place chicken in the slow cooker that has been lightly coated with cooking spray.
2. In a small bowl mix together the tomatoes, garlic and next 5 ingredients. Pour over the chicken.
3. Cook on low for 8 hours or on high for 5.
4. Remove cooked chicken to shred it; use two forks to pull it apart.  Return the chicken to the slow cooker along with any juices. Stir in the lime juice and cilantro.
5. Serve up on warmed tortillas. Add toppings.

Serves 12. Each serving ¼ cup of pulled chicken taco mixture split between 2 tortillas.

The perfect summertime recipe- easy, done ahead of time and has leftovers so there is one less meal to cook!

Poached meats are easy to prepare and, because their flavor is so simple, they can be used in so many different kinds of dishes. I have talked with many friends and acquaintances who have an aversion to leftovers. To them, leftovers means eating day old soggy food. But like everyone wanting to have more home cooked, healthier foods in their diet, they don’t have time to cook from scratch for each meal. Poached meats gives new meaning to leftovers.

Poached chicken can be a delicacy for dinner; right after it has been cooked. The next day more of the same meat can be cut up in chunks and used in a salad. Additional dishes can be made where it can be included in omelets, chicken salad nestled in a half of a cantaloupe or used in an Asian wrap. The uses for poached chicken are not only versatile but also almost infinite.

What I like to do when I know I am going to have a busy week is to buy a couple of pounds of boneless chicken breast to poach at the beginning of the week. It is a dish you can prepare and cook when you are already cooking another meal so it is a time saver on all fronts. Next I make sure to plan out two to four meals, depending on how many people I have at home, that I can use the poached chicken as part of the recipe. Having your meat already pre-cooked for some meals can save a lot of prep time in the kitchen.

Easy Recipe for Poaching Chicken



Here is how I poach my chicken:

Poached Chicken

Ingredients~
2 pounds boneless skinless chicken breast
2-4 cups low-sodium chicken broth
1 cup dry white wine (use the small bottles you can buy at the liquor store that come in a six-pack)
1½ teaspoon tarragon
1 teaspoon garlic chips

Directions~
1. Rinse chicken and place in a large skillet that has a cover.
2. Add the broth to the chicken just until the meat is barely covered.
3. Add all other ingredients
4. Bring broth to a boil then lower heat to a simmer. Cover and simmer for 15 minutes or until meat is cooked through. Do not over cook.

Makes 8 servings.

The great thing about revving up the grill in the summer is that you can do so much of your cooking outside and avoid a hot kitchen and air conditioning on over drive because of it. It is also a pleasant excuse to hang outside as the evening cools, the sun sets and the night critters start their songs. I have found the best conversations have happened at that time of day when everyone is relaxed, sipping a cool drink, and the pressures of the day have receded.

When our children were little and we lived in a house with a big backyard, my husband hung a wooden swing from an old oak tree we had there. Adults and children alike loved swinging on that swing. With a few helpful pushes you could swing high, up and over the fence. The rhythm of swinging as you arced back and forth was exhilarating and comforting all at the same time. So much better than spending the evening inside watching TV.

The grill is an easy focal point for the backyard. The glow and smells draw people to it. The main thing is to keep it simple most of the time so you can enjoy the time grilling instead of stressing over it. The easiest is to grill your whole meal outside. The key is timing. Sometimes everything can go on at once but often the meat needs to go on first and then you add the vegetables for the last few minutes.

One of our family's favorites is grilling marinated chicken legs. Since you can eat them with your fingers they are fun to eat outside and can be enjoyed by all ages. Another fun backyard barbecue side dish is asparagus vinaigrette. These too can be picked up and eaten with your fingers. They can also be made ahead of time and served cool on a hot night. Finally, I love grilling sweet peppers, in all colors, in a basket on the grill. You can add any other vegetable to them and they can be spiced up or cooled down depending on what you want to eat. They add great color to any meal.

Here are the recipes for the Perfect Backyard Barbecue:

Grilled Chicken Legs
These chicken legs were marinated first in a wet marinade, then grilled with occasional basting.

Marinate for at least 20 minutes (check out my marinade choices on previous blogs like Summer Grilling Marinade for Chicken with Lemon Pulp. Place the chicken legs on a hot grill, grilling 4 sides for at least 4 minutes each side, or until cooked. Serve 1 -2 chicken legs per person (kids will most likely want one).

Asparagus Vinaigrette
Clean and snap the ends off a bunch of asparagus. You can grill it ahead of time before the barbecue begins to keep all cooking outside and to add a smoky flavor to the asparagus. If you grill, spray them with olive oil cooking spray first, turn regularly and don't over cook them. Should take 5 to 10 minutes depending on how hot your grill is.

If you prefer, you can steam them inside on the stove top by bringing the water to a boil in a steamer. Steam the asparagus 5 - 6 minutes. Let it cool.

Add 2 tablespoons of the light lemony vinaigrette. This can be made ahead of time, even the day before, refrigerated and then served when needed.

Grilled Sweet Peppers
Buy enough peppers so there is enough for one per person. Get them in all colors-- red, yellow, orange and green (I skip the green because I don't like the "bite" it has) . Wash the peppers, slice them in half to remove the seeds. Then cut them in half again to make large cubes, easy for grilling.  Spray with olive oil cooking spray, sprinkle with garlic powder and herbe de Provence. Place in a grilling basket then grill until nicely charred and tender, about 5 to 10 minutes. 

Yummm...I can smell the food on the grill...and hear the happy voices of friends and family enjoying a perfect summertime backyard barbecue!
