Wilted Kale Salad with Pancetta and Fried Egg

Pancetta has the wonderful flavor of a cured bacon without all the fat. It has just enough fat and salt to please your palate. I love making this dish when I don't want the hassle of a full blown dinner but do want to provide a healthy and flavorful dinner. It almosts qualifies as comfort food for me. And what's great is that it is packed full of health and goodness. Because it is warm it is a meal that can be served any time of year, including the dead of winter.

Ingredients~
1/2 red onion, thinly sliced
1 tablespoon olive oil
1 package Pancetta, 3 ounces, thinly sliced
2 cloves garlic, minced
1 package prepared Kale
1/4 cup chicken broth
2 eggs
Cooking Spray, olive oil flavor
2 tablespoons Balsamic vinegar

Directions~
1. Place oil in hot skillet, preferrably cast iron, and add onions. Saute for 3 minutes. Next add Pancetta. Cook until slightly browned. Then add garlic. Keep on high until garlic starts to turn brown. Remove from heat and place ingredients in a bowl.
2. Put the skillet back on the stove on medium heat. Spray with olive oil spray. Add kale until mounded. As it wilts add more until all of the kale is in the skillet. Pour the chicken broth on top. Cover and let simmer 3 to 5 minutes until the kale starts to wilt but is not completely cooked. Remove from stove.
3. Place wilted kale in bowl and add other ingredients, toppped with the Balsamic vinegar. Toss and divide between two plates.
4. Spray skillet again with olive oil spray. Fry eggs sunny-side up. Place one egg on top of each serving of salad.

Serves 2. Calories per serving 340.

This past week has been great for going down memory lane. I started my blog on May 2, 2011... nearly 3 years ago. I am a mom, working hard to build her own business. It is so wonderful to me to think just shy of 3 years ago my blog has had well over 28,000 pageviews.

It is funny to see how I categorized things "way back when". I wasn't very good at providing links either. This year I have a goal to provide a list of visible labels for my readers to see and to add more usable labels like "fish",  "chicken", "beef" and "muffins". This should make it so much easy to search my blog and find recipes and menus that appeal to you. It won't be perfect but it will be so much easier!

To that end, I went back over all my discussions about recipes and menus to find those that were 400 Calories or less for a meal. Good news is there are many. In fact I am still working on the total list but wanted to offer what I have without any more delay. You can now find it on the right-hand side of my blog under "Labels" or you can just click on 400 Calorie or Less Meals to see the list I have assembled.

Slow Cooker Recipe that uses Seasonal Pumpkins

We are looking forward to the holidays everything about this time of year is filled with fun anticipation. As a family, though, we want to maintain the regular cycles of life and eating. One of the regular routines is our daughter's weekly preparation of crockpot recipes! This week she did a crockpot recipe we originally sourced from She Wore the Dress and I Stayed Home. Truthfully, the recipe called for butternut squash but since pumpkins are plentiful and we have pumpkins available from our decorations, we chose to use the pumpkins. It turned out to be a great substitute. The other part of the recipe we changed was to put only one poblano pepper in instead of two. We also decreased the brown sugar. The recipe had a mild amount of heat but was not spicy hot.

The flavoring in this recipe was rich, savory and sweet. The pumpkin and sweet potato added the hint of sweet. The cumin, ginger and cinnamon added the savory. The pork combined with all the ingredients made it a rich and satisfying dish. We made 8 servings out of the crockpot for about 1 1/2 cups per person. We completed the meal with steamed haricots verts in chicken broth.

An easy recipe that turned into a cozy and flavorful winter meal. We all loved it. A definite repeat.



Slow Cooker Spiced Pork with Pumpkin and Sweet Potato 

Ingredients
  • 1 1/2 pound pumpkin or butternut squash, halved, seeded, peeled and cut into 1-inch cubes
  • 1 pound sweet potatoes, peeled and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1/8 cup packed brown sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 fresh poblano pepper, seeded and cut into bite-size strips
  • 3 onions, cut into thin wedges
  • 2 pound pork shoulder roast, trimmed of fat and cut into 1-inch cubes
  • 2/3 cup reduced-sodium chicken broth
  • 1 tablespoon snipped fresh parsley

Directions

1. In large bowl combine squash and sweet potatoes. Drizzle oil over veggies, tossing to coat. In a small bowl combine brown sugar, salt, cumin, black pepper, cinnamon, and ginger. Add half of the spice mixture to squash mixture and set aside. Transfer to a 5 quart slow cooker. Add poblano peppers and onion to cooker.

2. In small bowl combine the meat and the remaining spice mixture, tossing to coat pieces. Add meat to cooker. Pour broth over meat.

3. Cover and cook on low-heat setting for 7 to 8 hours or on high-heat setting for 3 to 3.5 hours.

4. To serve, transfer squash mixture and meat to a serving bowl. Sprinkle with parsley. Serve up with LivSpoons!

Serves: 8. Calories per serving: 478. Fat 7g (Saturated Fat 2g); Sodium  48mg; Protein 15g; Carbohydrate 17g; Fiber 4g; Sugars 9g.





Make-it-a-Meal Tip:  Add 3/4 cup of steamed green beans for 26 calories to complete your meal. Total calories for the meal will be 504.

No Cook-- Prosciutto Peach & Sweet Lettuce Salad

The first of my No Cook meals was the Prosciutto Peach & Sweet Lettuce Salad. It was so delightful not to have to "slave over a hot stove" for a change in order to fix dinner! This was an easy to assemble dinner.  The fresh, ripe peaches from the Farmer's Market were delicious in the salad. Adding goat cheese and prosciutto made the salad truly scrumptious. Using sunflower seeds as a crunchy "nut" was nice and refreshingly different. I served this with a slice of Pugliese bread to complete the meal. Total calories for the meal is 379. The only thing I would do differently is add additional lettuce to make the salad a little more bountiful, one bag of lettuce seemed a little light. No one had anything left on their plates. A great success and a definite repeat...soon!

With all our jars of marmalade, it is nice to find a variety of recipes that use it as part of the ingredients. Honestly, there are only so many peanut butter & jelly sandwiches you can make or pieces of bread you can toast and put marmalade on top of...it just doesn't make that much of a dent in a yearly harvest. So I have tried out a number of healthy recipes that use marmalade. Below is a list of some of our favorites:

Another Excellent Crockpot Dish Made By My Daughter

We had company last night. My daughter did the cooking! She picked Spiced Pork with Squash and Potatoes from the Skinny Slow Cooker magazine I picked up at the grocery store. As luck would have it, I found the recipe on line from somebody else's blog! It was worth searching for so others can enjoy it. It was delicious and a hit with the guests.

To make it easier to assemble, I bought the pre-cut butternut squash at the grocery store.  That saved a fair amount of time and hassle for my daughter. I was a little worried about adding the fresh poblano peppers, fearing that it would make the dish too spicy. It didn't. It added complexity without the fiery hotness some peppers, like jalapenos provide.

I made fresh Beer Bread and a salad to go along with the Spiced Pork. Easy Meal which made for a fun party. I love seeing my daughter grow in her enjoyment of cooking and fixing meals!

Maple Mustard Pork with Caramelized Apples

We had a great dinner last night. The menu consisted of Maple Mustard Pork Tenderloin with Caramelized Apples, Sauteed Kale in garlic, onion and chicken broth and Soft Polenta. This time of year I love adding roasts to my menus. Pork is a lean meat and easy to prepare. This is a delicious recipe.

This was a good meal for Super Foods. Apples are plentiful this time of year and in so many varieties. This recipe calls for Granny Smith apples. Apples are low in calories, high in soluble fiber, which helps lower cholesterol and protects us from a whole host of diseases. Kale is a cruciferous vegetable packed full of vitamins and cancer fighting benefits. It is considered the "Queen of the Greens". We prepare it the same way we do sauteed spinach. This is a super easy way to cook a vegetable.

The polenta was made from cornmeal. Very economical and easy to do. We discovered, however, that it is pretty tasteless on its own. Next time we plan to sauteed some onion and garlic with some mushrooms to add to the polenta as it cooks. Without adding many calories, I think we will add more taste and a more attractive look.

Summertime Salads

This is the week for salads. It is summer time and when it is hot outside there is nothing better than a salad to cool you down! I also especially like them for lunch since they can tend to be lighter in calories, saving some for afternoon snacks or a bigger dinner.

Here are a few I have had and liked recently-

 
 Mediterranean Tuna, Bread, and Cheese Salad

This was yummy with bocconcini, kalamata olives, cucumber, red onion and seared Tuna. You can find the recipe in Now Eat This! Diet by Rocco Dispirito on page 157. Only 278 calories.
Cobb Salad
This salad was also a winner. It was filled with a variety of ingredients from grilled chicken, avocado and bacon bits to heirloom tomato, crumbled blue cheese and scallions. You can find it in Now Eat This! by Rocco Dispirito on page 57. Only 235 calories.
Spinach and Bacon Salad
This salad may look like the simplest of the salads but is in fact filled with delicious ingredients like mushrooms, red onion, garbanzo beans and bacon bits. What makes it really tasty is the warmed dressing. You can find the recipe in Now Eat This! Diet by Rocco Dispirito on page 151. It does have the least calories with only 226 calories.
