This past year we have been reminded of how precious life is and how important our families are. As a mom I spend a lot of time wanting to make sure my kids stay healthy. Portion Control is the Key to Success

There are so many helpful resources available on the internet these days. I recently visited the Joslin Diabetes Center website to find out more about their recommendations regarding healthy eating for kids living with diabetes. At the top of the page I saw the title “Key To Success: Portion Control.” The article on the page begins “The amount of food you eat is closely related to blood glucose control. If you eat more food than is recommended in your meal plan, your blood glucose (sugar) will go up. The only way you can tell if you are eating the right amount is to measure your foods carefully.” No matter what age we are or what chronic condition we may be living with and managing, eating healthy is all about what we eat and how much we eat. Portion Control is the key to success.

5 Portion Control Tips to Help Kids Living with Diabetes

1. Easy measuring.  Finding ways to measure that are easy and repeatable is a must when we know portion control and portioning amounts is critical to our health. Having a scale to weigh your food and having measuring/serving spoons to portion your foods are must haves. Check out LivSpoons for easy measuring. 2. Balanced Diet. We know that just eating one type of food isn’t good for us. We need balance in our diet to live health. We also know each food type has its own portion size. 4. Mindfulness. A lot of our eating is done without thinking. If we are not present when we eat we can end up eating way more than we intended. When living with diabetes it is important to be present when you eat and aware of what you are eating so you can manage your blood glucose and insulin dosage appropriately. Portioning snacks as well as meals helps us to avoid mindless eating.

5. Involve the entire family in Healthy Eating. Eating healthy is a way of life. If one person is living with a chronic illness, like diabetes, it affects the entire family. Healthy eating benefits everyone. Creating a healthy eating environment at home and making it a part of everyday life makes sustaining and, perhaps more importantly, enjoying a healthy lifestyle possible. Kid-Friendly Macaroni and Chesse


Macaroni and cheese is one of those classic comfort foods. When the weather is cooler or we just need a cozy meal to feed our soul, this is a classic go-to. 

The challenge is the recipe for Mac & Cheese is traditionally loaded with carbs and calories. My quest was to figure out how to offer a lower carb and lower calorie version of this classic that could qualify as diabetes-friendly, kid-friendly and gluten free. A tall order.

To be considered diabetes-friendly I wanted to have the overall carb count 45 grams or lower. This recipe came out at 44.25 grams.

To make it creamy and thick without adding flour I used butternut squash and Greek yogurt. Below is my new version of Macaroni and Cheese that met the necessary requirements AND the thumbs up from my family.



Kid-Friendly Macaroni and Chesse


Luscious Macaroni and Cheese

Ingredients

  • 3 cups cubed butternut squash
  • 1 ¼ cups fat-free, low sodium chicken broth
  • 1 ½ cups nonfat milk
  • 2 garlic cloves, peeled
  • 2 tablespoons plain nonfat Greek yogurt
  • 1 teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 ¼ cup Gruyere cheese, shredded
  • 1 cup pecorino Romano cheese, grated
  • ¼ cup Parmesan cheese, finely grated, divided
  • 16 ounces Banza® chickpea elbow pasta
  • 1 teaspoon olive oil
  • Cooking spray, olive oil flavor
  • 2 tablespoons parsley, chopped

Directions


  1. Preheat oven to 375°. Put water on to boil for cooking the pasta.
  2. Combine squash, broth, milk and garlic in a medium saucepan. Bring to a boil over medium-high heat. Reduce heat to medium and simmer until squash is tender when pierced with a fork, about 20 minutes. Remove from heat.
  3. Place the squash mixture in a blender. Add salt, pepper, and Greek yogurt. Remove the center cap in the blender lid to allow the steam to escape. Blend until smooth.
  4. Place blended mixture in a bowl. Stir in the Gruyere, Romano and 2 tablespoons of Parmesan. Stir until combined.
  5. Cook pasta according to the package directions omitting any salt or fat. Once cooked, drain well.
  6. Add pasta to the squash mixture. Spread the mixture evenly into a 13 x 9-inch glass or ceramic baking dish coated with cooking spray. Sprinkle top with remaining 2 tablespoons of Parmesan.
  7. Bake at 375° for 20 minutes or until bubbly. Next turn on the broiler for 5 minutes to brown the top a nice golden color.
  8. Sprinkle with parsley and serve immediately.

Ten Fun Tips for Getting Kids Engaged in Healthy Eating

We’ve all been there. It’s an hour past lunchtime, and it’s all you can do to find the energy to pull the ring-top on a can of processed something-or-other. You know there are better alternatives, but your first priority is making sure your growing child actually eats something.

Unfortunately, the obesity rates in teens are alarmingly high, with 16% of teens being overweight and almost 14% ranking as obese. These statistics are especially important when you consider that 208,000 Americans under age 20 are estimated to have diabetes, according to the American Diabetes Association.

This is why Livliga has partnered with The Center for Children's Healthy Lifestyles & Nutrition (CCHLN). During the month of September, 10% of all sales will be donated to help fight childhood obesity. Here’s the good news: with just a little bit of planning, it’s actually cheaper and easier to feed your family with healthy, at-home meals. Here are 10 ideas to inspire your kids with healthy eating habits and keep them safe from the rising obesity epidemic. 


1. KITCHEN STAPLES

First things first. You can’t eat healthy food at home unless it’s actually in your home.  Involve your children in writing a shopping list with healthy eating choices. Ingredients for Kidliga dishes like Mrs. Strawberry’s Easy Peasy Quinoa Salad can be stocked ahead of time, which saves time on grocery store visits.

2. VITAMIN CHALLENGE

Teach kids about the types of vitamins in the whole foods that make up the favorite dishes they eat. For example, did you know that a yellow bell pepper has more Vitamin C than a lemon? Turn “Vitamin Hunt” into a fun mealtime game. 




3. MAKE IT PRETTY

Draw a face on a soft-boiled egg with edible-ink pen markers. Cut sandwiches into fun shapes using cookie cutters. Help your children decorate the edge of plates with parsley “trees”, cinnamon “snow” or a ring-o-raisins. 




4. WHAT’S IN A NAME?

Create fun names for dishes together with your children (Ants on a Log and Pigs in a Blanket are two existing examples). Then, encourage your children to draw menus with all the healthy dishes you’ve created together.  




5. FANCY SCHMANCY

Set the table together with a vase of flowers and a pretty tablecloth. Light candles and let children make a reservation for your highly exclusive restaurant. This is especially fun with decidedly simple foods such as cereal with yogurt or grilled cheese sandwiches.

6. KIDS FUSION


Use chopsticks for Asian-inspired meals such as non-spicy peanut butter sauce over Udon noodles. If you’re prepared for an after-meal cleanup, teach your children about Ethiopian Injera or Indian Naan and let them scoop their food with bread instead of using a fork.

7. PLAY CHEF

Make time for play (and learning) in the kitchen. Assign some age-appropriate cooking tasks for each child. Getting kids involved in preparing meals gives them a sense of accomplishment and they will be far more likely to eat a meal that they themselves helped to prepare. 




8. SLOW IT DOWN

Slow cookers (aka crock pots) may just be a parent’s best friend. Not only can you actually leave your house while the crock pot is working its magic, it’s easy to add vegetables in a delicious stew. Chop kale into very fine pieces. Use a cheese grater for carrots. By the time it’s all blended together, kids and adults will love eating their vegetables. (Time-saving tip: Use cooking spray on the inside of the crockpot before each use for easier cleanup!)

9. BLEND IT OUT

Smoothies are a great way to get fruit and veggies into a kid’s diet. Plain yogurt offers both protein and probiotics. Freeze leftover fruit which otherwise might have gone to waste. Frozen berries will not only add sweetness, but will enhance the taste of the handful of baby spinach you are about to sneak into the blender (yes, yes you are!).

Healthy Lifestyle Habits Can Change The Future For Our Children

A recent analysis done by the American Heart Association found that a shocking 90% of all American children have poor diets. Their poor diets are setting them up for ongoing health problems, including heart disease at an early age. How could this happen in the richest nation in the world?

It seems the more fast paced our lives have become we as a society have looked for solutions that are easy, fast and affordable. In order to meet these needs our food has become more and more processed, refined and pre-packaged which has required foods with longer shelf lives (code for not fresh and filled with salt, sugar and salt). Sadly this has not improved our quality of life but instead diminished it. Our kids are living with the burden of a lifetime of disease.

We do see some solutions emerging in our schools, communities and homes. It does require changing our priorities. There needs to be a focus on fresh, whole foods and cooking more at home so we can control what we eat and the quantity we consume.

This can seem overwhelming and a burden. It doesn't have to be. It does require a mindset and some creativity. We have to demand change. Dr. Brian Wansink in his most recent book Slim by Design shows us how we can change our food environments for positive outcomes. He even offers specific resources and ways to become a health advocate for your kid's schools, in your community and workplace. Dr. Jim Hill and Dr. Holly Wyatt show us in their book State of Slim how others who have struggled with weight loss, adopted a healthy lifestyle, and made it possible and sustainable for themselves by sharing the common threads in their lives. And then there are the healthy lifestyle chefs like Jamie Oliver who have shown us how accessible home cooking can be and how kids can be involved in their own healthy eating and cooking.

There are now more and more healthy lifestyle products available to make it possible and enjoyable to adopt healthy eating habits. Easy Eggs with this Kidliga Kid-Friendly Recipe

The month of September is all about raising awareness regarding childhood obesity and supporting children learning about living a healthy lifestyle (see information below). Part of learning about health is learning about healthy eating. The best way to do that is to participate in cooking. Kids can make the best chefs because they are curious, eager to try new things and best of all, they love to share!

In support of National Childhood Obesity Awareness Month and to encourage kids to explore cooking and embrace a healthy lifestyle, Kidliga has created some new, fun and easy recipes. Below is the first one we'd like to share. The recipe is named after Sammie who is a character in an award winning adventure book that teaches children about what makes up a balanced meal.


Sammie’s Sensational Egg Cups


(Choose which combinations of flavors you would like to include in your egg cups. Below are three tasty options.)



Ingredients: 
  • 1 ½ cups egg (6 eggs), whisked (whole, egg beaters or egg whites)
  • 12 Muffin Tin Liners
  • Canola Oil Cooking Spray
  •  ⅛ cup LivSpoon


Directions:

1.    Chop all vegetables, fruits and herbs. Place in separate small bowls. Chop enough of each
       ingredient to place 1 tablespoon in each muffin cup (about ¾ cup).

2.    Spray the muffin tin cups with cooking spray.

3.    Place muffin tin liners in each muffin cup and spray with cooking spray.

4.    Fill a ⅛ cup LivSpoon with combinations of ingredients (recommended: ½ each of the listed
       ingredients within each category to follow prescribed combinations; or make up your own). Fill
       the LivSpoon twice, emptying the ingredients into the muffin tin liners.

5.    Once ingredients are chosen and placed in the muffin liners, fill each liner with 1 to 2
       LivSpoons-ful of whisked egg, until the liner is nearly filled with liquid egg.

6.    Place the muffin pan in an oven pre-heated to 375°. Bake for 20 minutes or until golden brown
       on top. Serve immediately. Serves 12.



  • Tip 1: Whisk all egg types. The egg will rise better.
  • Tip 2: Whole eggs rise best and are most easily removed from the liners.
  • Tip 3: Careful what fruit or vegetable you use. If they have two much water/moisture in them they won’t bake well.
  • Tip 4: Spray muffin tins in addition to liners for easy clean up.
